Christmas Spiced Chicken Thighs
Christmas spiced anything means cinnamon, cloves, sugar, and mint, in my household. Add citrus fruits, and root vegetables and you've got a delicious mix of flavours and scents.
We love this dish in our house, all ages, kids, grown ups and teens can't get enough of the tender chicken, but mostly the festive-flavoured sauce which is finger-licking good.
: 1 hour 10 minutes
: 6 servings
Tblsp mint sugar
5 Orange segments
12 boneless chicken thighs
Half tsp black pepper
Sprig of thyme
Mix the buttermilk, orange segments and spices in a bowl together.
Add the mint sugar and mint leaves.
Add the chicken and stir. Allow to marinate overnight.
Place in the oven for an hour and 10 minutes at 160 degrees/gas mark 3.
Cooking the meat slowly allows it to tenderise and the sauce to caramelise.
Remove from the oven.
Pour over the juices from the tray/pan and serve with roast potatoes.
Enjoy a filling and festive dish with the much-loved Christmas spices, and everyone will be happy.
