Chocolate Weetbix Slice
This is the perfect treat for afternoon tea when your ravenous children come home from school and you want to feed them something that is a little bit healthy. It's also a great recipe to get your children involved in making.

1/3 cup cocoa powder
3 tblsp of margarine, melted
1 cup plain flour
1/3 cup brown sugar
1/2 cup of water
1 cup icing sugar
2 tblsp cocoa powder
2 tblsp milk
Preheat oven to moderate (180C/350F)
Grease and line a slice tin with baking paper.
Crush the weetbix - placing it in a plastic sandwich bag and using your hands is an easy way to do it.
Combine the crushed weetbix, cocoa powder and melted margarine in a bowl.
Add the brown sugar, flour, and coconut and mix well.
Add the water and mix until well combined.
Pour mixture into prepared tin and press down with either a fork or wet finger tips until the whole base of the tin is covered.
Bake in oven for approx. 15 minutes.
Whilst slice is cooking make the chocolate icing.
Icing: sift icing sugar and cocoa powder together; add milk and mix until well combined.
Remove slice from oven and let stand for 5 minutes.
Ice slice whilst still warm and sprinkle some extra coconut on top.
When slice has cooled cut it up and enjoy.
