These little beauties come from the Wholefood Simply website and are absolutely divine.
If you love cheesecake as much as I do and you love chocolate even more, then these will be devoured in no time.
They taste like little balls of chocolate cheesecake with the gorgeous crunch of dark chocolate.
Because they are made with whole ingredients, you can enjoy these without feeling too guilty.
Preparation Time: 20 minutes
Cooking Time: Only requires cooling time for approx 30mins
Makes: 10-12 servings
Ingredients
250g full fat cream cheese
2 Tbsps of cocoa or carob powder
3 Tbsps of maple syrup
1/2 tsp of vanilla bean extract
150g of good quality organic dark chocolate, melted
Method
Line a cookie tray or sheet tray with baking paper.
Put all the ingredients, aside from the chocolate, into a food processor and process until smooth but do not over mix.
Using slightly damp hands, combine mixture into small bite-sized balls (should make 12) and place on prepared tray. Place in the freezer for an hour to harden.
Using skewers, dip the bites in to the melted chocolate and swirl around till covered in chocolate (they harden straight away!) Place back on the tray. When you remove the skewer, fill the gap with extra chocolate.
Place back in the fridge/freezer for the chocolate to harden more and then serve cold.
