Easy peasy Chocolate Button Cookies for lunch, to put in a lunchbox or as a snack! Store them in an airtight container for them to stay crunchy and fresh for a week.

Makes: 20 servings
Ingredients
90g unsalted butter, softened
˝ cup caster sugar
˝ tsp vanilla essence
1 cup plain flour
1 egg
1 tbsp cocoa powder
20 dark chocolate melts
Method
Preheat oven to 160°C, line a baking tray.
In a large bowl beat together the butter and sugar until pale.
Add in the vanilla essence and egg, beat to combine well.
Sift the flour over the butter mixture.
Sift in the cocoa powder and combine the ingredients together until a soft dough forms.
Transfer the dough to a lightly floured surface and roll the dough out into approximately 4mm thickness.
Using a round cutter, cut circles out. Repeat with remaining dough.
Gently press a chocolate melt on each cookie and transfer onto the prepared tray.
Bake for 10 minutes, transfer to a wire rack to cool for 5 minutes.
