Chocolate Bat Cupcakes
With Halloween around the corner, what could be more fun than dressing up, trick or treating and eating sweets and lollies. Have fun making these batty cupcakes whether it's to have fun on Halloween, for a birthday party or any occasion at all!

1 cup plain flour
1 tbsp cocoa powder
¾ cup caster sugar
1 ½ tsp baking powder
40g unsalted butter
¼ tsp vanilla essence
Pinch of salt
12 oreo cookies
24 mini oreo cookies
24 white chocolate bits
24 milk chocolate bits
3 tbsp butter
2 tbsp cocoa powder
3/4 cup icing sugar
3 tsp milk
Preheat oven to 170°C, line a muffin tray with cupcake cases.
Beat together butter and sugar.
Add in the egg and beat well.
Sift in the flour, baking powder, salt and cocoa powder.
Add in the milk and beat well to combine all the ingredients.
Spoon the mixture into the cupcake cases.
Bake for 20 minutes or until a skewer inserted comes out clean.
Remove from the oven and transfer to a wire rack to cool.
Meanwhile for the icing, melt the butter in the microwave and whisk in cocoa powder, icing sugar and milk until the icing comes together.
Refrigerate for 10 minutes for it to set.
When the cupcakes are completely cooled, use a knife or spatula to ice the tops of the cupcakes.
Use a sharp knife and cut the oreo cookie in half. Place them on the cupcake for the wings.
Twist and halve the mini oreo cookie with the cream inside intact. Place two on the cupcake for the eyes.
Use a sharp knife and cut a mini oreo cookie in half. Push it into the sides of the cupcake for the bat ears.
Press two chocolate bits onto the oreo eyes for the pupils.
Place two white chocolate bits in the middle for the fangs.
