Chocolate Almond Hedgehog Slice

A chocolatey, nutty slice that makes a perfect treat in any lunchbox! Wrap slices in plastic wrap or place them into small airtight containers for a fantastic, delicious takeaway treat to devour during the day! Or sprinkle with icing sugar for a tasty dessert.

Preparation Time: 15 minutes
Makes: 20 servings


100g butter
2/3 cup caster sugar
2 tablespoons cocoa
2 tablespoons of dessicated coconut
1 egg
200g crushed sweet biscuits
1/2 teaspoon of vanilla essence
1 cup of chopped almonds


Lightly grease a slice tin with butter or canola spray.

In a microwave safe bowl, place the sugar and butter. Microwave on high for 1 minute to melt the butter. Use a spoon to mix well so that the butter and sugar combine, before microwaving on high for another 30 seconds. Remove from the microwave and stir to combine.

Add the cocoa powder to the butter and sugar mixture and stir to combine.

Place the coconut into the mixing bowl as well and mix well to create a runny, chocolately goo.

In a separate bowl, lightly beat an egg using a fork. Place the beaten egg into the chocolatey goo. Add the vanilla essence and mix well. Keep stirring with a spoon until completely combined so that there is no lone egg still sitting un-mixed on top of the mixture.

Roughly chop the almonds, add these to the mixture, and fold through. Stir the nuts through until they are completely coated with the chocolate mixture and well embedded into the mix. Chopped walnuts are also a tasty addition here.

Crush the sweet biscuits into a rough powder, then add these to the chocolate mixture and stir through. Continue stirring until the biscuit crumbs are completely coated with chocolate mixture.

Pour the mixture into a slice tin and press down using a spoon.

Ice with chocolate icing - Place 5 tablespoons of chocolate icing mixture (or icing sugar and cocoa powder) into a mixing bowl and combine with a knob of butter and some water until thick.

Refrigerate to chill, then slice into rectangles.
