Choc Almond Shortbread

Choc almond shortbreads are a delightful and delicious treat at recess time, or at the end of a long day.



Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 20 servings

Ingredients
250g butter
2/3 cup icing sugar
2 teaspoons vanilla essence
2 cups plain flour
1/3 cup custard powder
1 tablespoon cocoa powder
1 cup of chopped almonds

Method
Preheat the oven to 140 degrees C and line or grease a baking tray.

Cream the butter, icing sugar and vanilla essence in a mixing bowl.

Sift in the flour, custard powder, and cocoa powder. Mix well to combine and form a chocolate dough.



Chop the almonds, or place them in a plastic bag and lightly smash with a rolling pin. Add these to the chocolate dough and fold them into the mixture.



Coat your hands in flour to prevent sticking, then roll 1-2 teaspoons worth of dough into small balls.



Place each dough ball about 2 centimeters apart on a baking tray. Flatten each biscuit slightly with the heel of your hand.



Bake for 15-20 minutes, or until cooked through. Allow to cool on a wire rack.
