It's creamy. It's sweet. This bowl of chicken creamed corn soup would be a hit amongst the kids and adult too!

Makes: 8 servings
Ingredients
4 chicken thigh fillets, diced
4 slices middle bacons, diced
1 brown onion, diced
2 cans creamed corn
2 eggs, lightly beaten
2 vegetable stock cubes
crusty bread, to serve
Method
Heat 2 tablespoons of vegetable oil in a large stockpot. Add in the onion and cook until caramelised.
Add in the bacons and cook until bacons are browned.
Add in the chicken and cook until chicken turns white. Add in the stock cubes.
Pour in the creamed corns and 3 cups of water.
Cover and bring to the boil. Simmer for 5 minutes.
Pour in the beaten eggs in swirls.
Mix well until the eggs are cooked. Season with salt and pepper.
