Chicken & avocado pasta salad
Preparation Time: 20 minutes
Cooking Time: 10-20 minutes (depending if you cook your own chicken)
Makes: 4 servings
Ingredients
3 cups of dried spiral pasta
3 cups of shredded cooked chicken (or we often use smoked or cook up a breast ourselves)
1 red onion, sliced thinly
2 avocados, sliced lengthwise
50g baby spinach
250g packed of cherry tomatoes
1/2 cup of whole egg mayonnaise
1/4 cup of lemon juice
2 Tbsp of fresh thyme, chopped
Method
Cook pasta in large saucepan of boiling, salted water until tender. Drain and transfer to a salad bowl to cool.
While pasta is cooking, mix together mayonnaise, lemon juice and thyme in a bowl and season with salt and pepper. Place in the fridge to cool.
Chop up all remaining ingredients and add to pasta. Drizzle with dressing when cold and toss gently to combine. (Keep wrapped in fridge until serving as it is best cold)
