Cheesy Scrambled Eggs

Scrambled eggs the cheesy way



This is one of my favorite childhood recipes. My grandmother would make this every time I went over to her house. She would put one triangle of happy cow cheese to each egg. You can make this recipe for as many or as little people as you want. The secret to this recipe is not to burn the cheese but to let the eggs blend gently with the cheese, making a soft, fluffy and very cheesy consistency. You won't be disappointed and I guarantee the kids will get you making this one a few times a week! Happy cow cheese is found in most supermarkets or deli's. You may also use its variant, the 'laughing cow cheese'. How cheesy is that!

Preparation Time: 2 minutes
Cooking Time: 5 minutes
Makes: 4-6 servings

Ingredients
6 eggs
6 triangles of happy cow cheese
oil or butter



Method
Scramble 6 eggs in a bowl



Melt 6 triangles of happy cow cheese in a frying pan with either oil or butter



When the cheese is soft (not burnt) add the eggs and blend together gently until the eggs are combined with the melting cheese



Season with salt and pepper to taste.

Serve up and enjoy!
