For an omelette to be enjoyed, my niece and nephew want cheese. It's something that cannot be discussed, I have to add it because they can taste the difference, when I have tried to omit it. I can, however, control the amount of cheese added, and have a few tricks to make the cheese seem to go further.

Makes: 2 servings
Ingredients
4 eggs (2 per person)
Handful spinach
A few gratings of parmesan cheese
2 mushrooms

Required ingredients
Method
Heat the oil in a frying pan and add the mushrooms.
Whisk the eggs in a bowl and season with the pepper.
Add the spinach to the pan along with the whisked eggs.
Cook for 2 minutes on one side, then add the cheese and flip over.
Serve with bread for an even more filling meal, but alone, these more than satisfy small tummies.
