Cheesy, cheesy scones

I used to make a similar recipe to this all the time when I was a kid. Now I add less cheese than I used to and some smoky paprika for an extra taste kick! A great recipe for the kids to make - they love rolling out the dough.



Yummy Cheesy Scones!


Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 12 servings

Ingredients
2 cups SR flour
1 tspn salt
50gm butter, cubed
1/2 tspn of smoked paprika (or regular paprika)
3/4 cup grated cheddar cheese
200ml milk

Method
Preheat oven to 240°C and line a tray with baking paper.
In a large mixing bowl, add flour and salt and mix to combine.
Rub in cubed butter to the mix – this should be until it resembles a breadcrumb like consistency – I am too impatient and mine always ends up looking lumpier – it still works.
Add in your paprika and cheese and mix around.

Create a well in the centre of your flour mix and add in your milk and stir to form a soft dough.

Tip out onto a lightly-floured bench and roll out until about 1.5 cm thick. Using a small glass or cookie cutter, cut out rounds of dough.

Place onto your prepared tray and lightly brush with a little milk. Bake for 10 minutes or until a light golden colour on top.
I love to eat these warm with some butter on top – melty – yum yum!
