Cheesy Cauliflower and Potato Bake

With Christmas just around the corner, why not experiment with some side dishes to go alongside your classic meats. I haven't met anyone who doesn't like potatoes and potato bake is an impressive dish that makes any occasion a little bit special. Most potato bakes are creamy, delicious and almost always are a guilty pleasure.

I made this one with cauliflower to get some more 'veggies' in our diet. However, the cream and cheese are not the most healthy, but in the holidays (when everyone goes a little bit food mad) who can say no to these tasty dishes. You can use parmesan or mozzarella to top this potato bake (whichever one you prefer) but the lighter cheeses go so well with everything and don't make the whole dish overpowering. The kids also like the more subtle cheeses.

Serve with your favourite meat and a side of salad; this potato bake recipe will not go unnoticed amongst your guests. The trick is to slice your potatoes finely and to precook the cauliflower so that it just melts on top of the potatoes. Top with some delicious cheese and it is a perfect accompaniment to any meal.

Preparation Time: 10 minutes
Cooking Time: 45 minutes
Makes: 8 servings

1 whole cauliflower
5 potatoes
3 cups of cream
2 cloves of garlic
1 brown onion
Handful of chives
2 tablespoons of vegetable stock
300g of mozzarella cheese


Cut up the cauliflower into florets.

Cut up onion and garlic.

Boil the cauliflower.

Cut up the potato into thin slices.

Layer a baking dish with potato slices and layer with onion and garlic.

Add the cooked cauliflower on top of the sliced potato.

Add the cream mixed in with the vegetable stock.

Bake for 45 to 50 minutes on 200 degrees under foil.

Sprinkle mozzarella cheese on top and bake for another 15 minutes until the cheese is golden.

When you get it out of the oven, sprinkle with chives and serve up hot and melting.
