You know the scenario, it's cold and the kids are hungry. It's been a long day and you'd really like to just cuddle up on the couch with a warm bowl of homemade soup. But ... that would involve cooking it. Which could take ages. And the kids are hungry. And you just want to eat.
Enter cheat night minestrone. A soup based on your favourite shop bought variety. But with a twist.

Makes: 4 servings
Ingredients
1 packet Pitango minestrone soup (can be replaced with your favourite shop bought soup)
1/2 a jar of tomato cooking sauce
1 can of butter beans
Method
Drop the minestrone into a saucepan, heat on medium.
Add tomato cooking sauce and butter beans. Stir.

All the ingredients you'll need for a delicious cheat night minestrone
Heat to boiling point, then reduce heat until it has been cooking for 4 minutes.
This has the added benefit of making the soup go further. Pitango soup is delicious, but only offers 2 servings. By adding the extra ingredients, you effectively double the quantity. It now serves 4 people and tastes great because it is based on an already delicious soup.
Even the kids like it. Especially with toast on the side. And you can get back to the couch.
