This creamy classic cauliflower gratin bake makes the perfect winter comfort with bubbling melting cheese.
Princess P is a big fan of this cauliflower-bake, anything with soft cauliflower in it, she squeals in delight.
The dish is a little indulgent because of the white sauce, cheese and bacon. I think it is a relative healthy dish with 2 serves of cauliflower. This is a good side to any roast dish, too.
This recipe is very simple to make and is absolutely delicious!

Makes: 6 servings
Ingredients
1 medium-sized cauliflower
200g bacon
1 cup milk
2 tablespoon flour
1 tablespoon butter
1 cup of mixed cheese
Sea salt flakes and black pepper
Method
Preheat the oven to 200C.
Cut the cauliflower into bite-sized florets.
Bring a large saucepan of lightly salted water to boil.
Cook the cauliflower florets and cook for 5 minutes.
Drain the cauliflower florets and line them in an ovenproof dish.
In a small sauce pan, add milk, butter and flour over medium-low heat.
Whisk the mixture until the flour dissolve and the sauce thicken. Add a dash of mixed cheese to make the white creamy and rich.
In a separate fry pan, lightly spray some oil. Fry the bacon until crispy.
Pour the white sauce over the cauliflower.
Generously top with the bacon stripes
Scatter the mixed cheese on top.
Place the tray into the oven and bake the cauliflower for 20 minutes or until bubbling and golden.
