This is a quick, healthy salad with carrots as a base, and if your child likes carrots, you could shave other vegetables into this mixture.
I have chosen some broccoli to add to the carrot, and the rest can be also substituted -for example, if you do not want nuts, leave them out, however the addition of cashews gives this a much nicer taste.

Makes: 2 servings
Ingredients
1 carrot, peeled and grated
Broccoli florets (not broken off)
2 tbsp sultanas
2 tbsp coconut -I used slivers but desiccated is also OK
Handful of broken cashews
¼ cup grated cheese (optional)
1 tsp curry powder (optional)
2 tbsp mayonnaise (optional)
¼ cup tinned pineapple, drained slightly (optional)
Method
Put the grated carrot in a bowl.
Grate the broccoli whilst it is still in a bunch and use as much or as little as you want -I grated about 3 bits.

Children who do not normally eat broccoli will probably not notice the taste in here
Add the sultanas, coconut, cashews, and any of the other optional ingredients.
Dress with a bit of vinegar and oil if required, though I ate it as is and added the curry powder and a bit of mayonnaise just before serving.
