Caramel fudge is a fun, quick, and easy indulgent treat! Serve with a dollop of cream or a scoop of ice cream, or with some fresh berries, for a luxurious dessert.

: 10 minutes, plus 1 hour to overnight cooling time
: 12 servings
125 g butter
1 tin condensed milk
2 tablespoons golden syrup
1 cup of brown sugar
100g white chocolate
Over a medium heat, place the butter in a pan and melt, stirring with a wooden spoon.
Once the butter is completely melted, add the condensed milk. Stir this through until completely combined.
Once combined, add the golden syrup and mix through.
Continue to stir constantly. Add the brown sugar and mix it through.
Stir constantly while the mixture comes to the boil. Simmer (still stirring with a wooden spoon) for 8-10 minutes until the mixture thickens slightly.
Turn off the heat and add the white chocolate to the mixture. Stir this through until completely combined (the heat of the butter and sugar mixture will melt the chocolate).
Lightly grease a slice tin. Pour the completed caramel fudge mixture into the tin, making sure that it spread evenly.
Refrigerate for at least 1 hour, ideally overnight.
When set completely, use a sharp knife to slice the fudge into smaller cubes, and enjoy!.
