Bubble and Squeak is the perfect family lunch to plan for Boxing Day. It's a traditional British meal which effectively uses up the leftovers from a roast dinner to make a hearty and tasty meal the next day. The name Bubble and Squeak comes from the sounds it makes as it cooks.
There are no exact measures provided for this recipe as you just use whatever you have left over. The only real essentials are potatoes as they bind everything together. Traditionally cabbage was included but you can also use up any other left over cooked veggies you have. Carrots, parsnips and even brussel sprouts are delicious.

Ingredients
Duck fat (goose fat or cooking oil)
Streaky bacon
Onion
Garlic
Cooked potatoes
Leftover cooked vegetables
Method
If you have duck fat left from roasting your potatoes then melt a good dollop of this in a frying pan or use some regular cooking oil.
Cut up the bacon and fry until the fat is crisp.
Add the finely chopped onion and some crushed garlic.
Finely shred the cabbage and other leftover cooked vegetables, add the the frying pan and stir around, cooking for a few minutes.
Mash left over potatoes and add to the veggies.

It's important to push down firmly
Mix evenly and then press down firmly.
Fry until the bubble and squeak holds together and starts to stick and then turn over to fry the other side. You'll find it easier to slide it onto a large plate and then turn over back into the frying pan.
Cook for a few more minutes and then turn out and slice up.
You could also add some leftover meat or a fried egg on the side for a more substantial meal.
