Roast, flavoured tomatoes turn any breakfast into a brunch for me, and my niece and nephew love it when I serve this brunch-style breakfast.
Preparation Time: 2 minutes
Cooking Time: 10 minutes
Makes: 2 servings
Ingredients
1 red onion
Handful of spinach
2 eggs
6 cherry tomatoes
Handful of rosemary
Handful of thyme
Half tsp black pepper
3 tblsp olive oil

Required ingredients
Method
Place the tomatoes on a baking tray, drizzle with the oil, season with the herbs and roast for 10 minutes at 180 degrees.
Poach the eggs for 2 minutes
Chop the onion finely and add to the tray of tomatoes.
Tear the spinach and add to a jar along with the pepper and glug of oil.
Start to layer the rest of the ingredients.
If you have any left over ingredients, store in a bowl to be enjoyed with another main.
