Teenagers want food quickly, they want it fast and these days, they're more conscious of what they're eating. So, why not make it easier for your son or daughter to enjoy a healthy brunch without the worry of whether it will keep them full or affect their skin. This is a protein-rich, fibrous, balanced meal, so here's to lazy mornings, waking at 11am and not having to worry about what your pubescent child is eating whilst they're considering what they might wear.

Makes: 1 teen serving
Ingredients
1 red onion
Handful of fresh spinach
2 garlic cloves
2 eggs
2 slices of wholegrain toast
Tsp black pepper
Tblsp balsamic vinegar
Tblsp coconut oil

Required ingredients
Method
Add the oil to a frying pan and turn to a medium heat.
Crush the garlic using the back of a knife and add to the frying pan. Cook for 10 minutes over a medium heat.
Crack the eggs into a saucepan and simmer for 5 minutes.
Add the spinach to the pan and toss.
Remove the toast from the grill/toaster and butter with a tsp of coconut oil.
Serve the vegetables a top the bread.
Top with the eggs and sprinkle with the pepper.
