Brown Sugar Bread & Butter Pudding

This is a recipe that I have adapted from Donna Hay. It is easy for kids of all ages to eat and is a firm family favourite. The pudding can be quickly whipped up and placed in the oven whilst you are cooking dinner. The brown sugar gives the pudding a more caramel flavour than the traditional bread and butter pudding. It is a great way of using up any type of stale bread.



Preparation Time: 10 minutes
Cooking Time: 60 minutes
Makes: 6 servings

Ingredients
3 slices of raisin bread (buttered)
3 cups of milk
4 eggs
1 teaspoon of vanilla essence
1/2 cup brown sugar
1 tablespoon white sugar for sprinkling



Method
Cut each slice of the buttered bread into 4 triangles.
Place in a greased 1 litre capacity oven proof dish overlapping the triangles slightly.
Whisk together the milk, eggs, brown sugar and vanilla essence in a bowl.



Pour the mixture over the bread and allow to stand for 5 minutes so that the bread can soak up the mixture.



Sprinkle over the white sugar and place in a baking tray and pour in enough hot water to come halfway up the side of the dish.



Bake for an hour or until the pudding is set.
Allow to stand for 10 minutes and serve whilst warm.
