Brown Rice and Vegetable Risotto

A healthy and nutritious meal.



Brown rice is a lot more healthier than white rice as it has vitamin B in it along with a low GI which keeps you feeling fuller for longer. Brown rice has a beautifully nutty flavour and makes a perfect accompaniment to any meal.

This dish is easy to prepare and can be enjoyed on its own as a wholesome lunch.

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 6 servings

Ingredients
1 cup of brown rice
2 medium leeks
2 cloves of garlic
2 carrots
2 tablespoons of vegetable or chicken stock
1.5 cups of water.

Method
Slice the leek and dice the carrots and garlic.



Fry up leek and garlic on olive oil until half cooked.



Add the carrots.



Wash the rice.



Add the rice to the vegetables and stir.



Add the stock and water and cook for 25 minutes or until the rice is cooked. Check regularly and stir. You may need to add more water throughout the cooking process.
