Bright Yellow Pepper Bake
Bright yellow makes me smile, and turns a normal dish into a sunshiney meal. Kids love bright colours, and this well-baked dish is yummy, and soft enough for little teeth and little tummies, too.

: 30 minutes
: 2 kids servings
Item 1 yellow pepper
Sprig of parsley
Sprig of thyme
Splash of olive oil
Wash the pepper and roughly tear the pepper into chunks and place in an oiled baking tray.
Add the herbs and place in the oven for 20 minutes, turning halfway through.
Remove from the oven.
Either serve lightly roasted, or grate some cheese on top, for a fancy extra, which makes it more appetising for kids.
To turn the side dish into a meal follow the next steps.
Crack an egg into the same baking tray the peppers roasted in, and squeeze in a handful of lime
Add black pepper and place in the oven for 1 minute.
Remove from the oven, season with thyme, and place back in the oven for 2 minutes.
Toss the pepper and eggs together for a quick and delicious dish that is a perfect balance of vegetables, protein and good fats - cheese.
