Ingredients 3 cup rolled oats
3/4 cup dessicated (or shredded) coconut
500g mixed dried fruit
Alternately, the mixed fruit can be substituded with:
1/2 cup sunflower seeds
100g pecans, chopped
50g pumpkin seeds
100g dried apricots, diced
Preheat the oven to 180.
In a bowl, add the oats and coconut (and seeds and pecans if using). Stir to combine.
Pour out onto a baking tray and bake for 25 minutes. Stir every 5 minutes until completed toasted. Set aside to cool.
Return the toasted oats to a mixing bowl and stir through the miced dried fruits (or sultanas and apricots is using).
Transfer the completed muesli to an airtight container for storage.
