Bombay baked eggs
Eggs are champion at breakfast time, and are full of protein, which growing kids needs. I've turned a simple breakfast ingredient into a spicy, fun meal, which uses minimal ingredients, and is a doddle to whip up. Here's to breakfast time.
: 2 minutes
: 15 minutes
: 1 child serving
2 basil leaves
Tblsp coconut oil
Half tsp black pepper
1 red chilli
Finely slice the chilli.
Crack the egg into a ramekin and add the chilli.
Add the pepper, basil and coconut oil on top.
Place in the oven for 15 minutes at 170 degrees/gas mark 4.
Remove from the oven and allow to cool for 1 minute (the ramekin will be too hot to handle)
Either serve in the ramekin if you're eating this yourself, but for your son or daughter, scoop it out of the ramekin and serve alongside some crusty bread.
