Boiled Eggs with Soldiers
My children were very fussy eaters however they all loved eggs, so this was a staple dish in my household for either breakfast or lunch.
Boiled eggs with "fingers" or "soldiers" were always a hit with them, and allowing them ot dip the soldiers in the egg made it fun.

As this was large, I cut up half the bread into soldiers, and dipped them in the yolk, and spread

I had this with cocoa and milk (no sugar) and I believe this is a healthy meal for children and in particular those who are not "good" eaters.

Bread for toasting
Jam or Vegemite -optional
Boil the egg ensuring that it it soft boiled -about 2 minutes.
When this is almost done, toast the slice of bread, and butter it. Butter is far nicer than margarine.
Soak the egg in cold water for a minute or so, and put in an egg cup.
Cut the soldiers so they will fit in the boiled egg.
They can have a thin layer of vegemite instead of salting the egg, however I did not use this.
Any left over toast, spread with topping of your choice.
Serve with a flavoured milk drink.
