A triple-threat in the world of baking comes in the form of this triple-tier blueberry butter cream cake; it has both style and substance and wins kids over. I made this for a friend's kids birthday party and safe to say when I presented it to my friend, she was overjoyed. The blueberries add a healthy kick too. Happy baking.

Makes: 10 servings
Ingredients
6 eggs
400g of
Butter
Sugar
Plain flour/self raising flour
Pinch of bicarbonate of soda (if using plain flour)
Tblsp vanilla flavouring
Pinch grated nutmeg
Tblsp strawberry jam
100ml double cream
100ml icing sugar
Method
Grease a cake tin with butter and line with baking paper.
Add 125g of the butter and 125g of the sugar to a large mixing bowl.
Combine by hand using a metal spoon.
Add two of the eggs and combine.
Add the vanilla and combine.
Sift 125g of the flour into the bowl and mix together.
Pour into the cake tin and place in the oven for 20 minutes at gas mark 3/165 degrees.
Repeat the above steps twice - you are making three tiers.
Remove the first layer out of the oven and allow to cool for at least 30 minutes.
Once cooled transfer to a cake stand and add the jam.
Ideally spread evenly, even to the edges.
Place the second (once-cooled) cake layer on top of the jam.
Add the cream, butter and icing sugar to a large bowl.
Whisk thoroughly until smooth and spread on the second tier.
Mix the remaining butter with icing sugar and a tsp of vanilla.
Spread evenly on the top layer of the cake.
Top with the blueberries - in a circle in the middle of the cake.
Serve immediately and enjoy.
