Blueberry Breakfast Scramble
Want a fun and gluten-free blueberry and protein filled breakfast? Here it is. Little ones may thank you for this.
: 5 minutes
: 8 minutes
: 3 kid servings
50g coconut flour
50ml coconut/almond milk
Half a punnet of blueberries (frozen works)
Half tsp ground cinnamon
Half tsp ground nutmeg
Grated thumb of ginger
Pinch of sea salt
Grate the ginger.
Add all the ingredients minus the berries to a bowl.
Combine until smooth. Pour into a frying pan.
Using a fork or wooden spoon, scramble the mixture and add the berries.
Transfer to a plate and serve.
Drizzle with the honey if you like.
Alternatively merely serve with a dollop of the honey.
