Bircher Muesli

Bircher muesli is a light and refreshing breakfast, packed full of fruit and energy to kick start the day! Make the base breakfast muesli in advance and store it in an airtight container, then throw all the ingredients together to create a delicious, scrumptious breakfast that the whole family can enjoy.

Preparation Time: 5 minutes
Makes: 4 servings


2 cups of Breakfast Muesli
2 cups of natural yoghurt
2 apples
1 cup of almond flakes or crushed or chopped almonds
(Optional - 1 cup of chopped walnuts)
2 cups of apple juice
Blueberries, to serve


Place 1/2 cup of breakfast muesli into each of 4 bowls.

Grate the apples and divide the apples evenly between each bowl to top the muesli with apple. Toss the muesli and grated apple together using a spoon until they are combined evenly. You can also thinly chop the apples to the desired size and shape to add more texture to the muesli.

Pour 1/2 cup of apple juice into each bowl and gently stir through the muesli and apple mix. This will add some liquid to the mix so that the muesli softens and is nice and juicy!

You can also, instead of adding apple juice, add 1 tablespoon of apple puree to each bowl and stir through.

Chop the nuts and place even amounts of each on top of each bowl of muesli and apple. Almonds and walnuts are optional - use your favourite types of nuts. Hazelnuts also taste fantastic in the mix!

You can also add seeds, such as sunflower seeds and pumpkin seed,s for extra goodness - just sprinkle these on top of the apple, muesli and nut mix before you place the yogurt on top!

Place a dollop of natural yoghurt on top of each bowl of muesli. You can just about use any kind of yoghurt here! Try a few different flavours out for a change from using natural yoghurt. Berry yoghurts taste great as well, so does mango yoghurt, and vanilla yoghurt, too.

Top with a sprinkling of your favourite berries (fresh or thawed), and enjoy!
