This banana bread is so easy to make and so delicious and moist. I have made this so many times now and passed it on to friends and family who make it as well. It is awesome! You can spruce it up with walnuts or whatever you desire.

Makes: 8 servings
Ingredients
1 cup of plain flour
1/2 cup of self-raising flour
1 tsp cinnamon
1 cup of brown sugar
2 large ripe bananas (3 small)
2 eggs
125g butter, melted and cooled
Method
Preheat oven to 180 C. Grease and line loaf tin. The smaller you use the more rise you’ll get.
Sift flours and cinnamon together in large bowl. Add sugar and stir to combine.
Melt butter and set aside to cool. Meanwhile mash bananas until puréed consistency with a few lumps for texture!
Whisk melted butter, eggs and banana together. Pour into dry ingredients and fold mixture until just combined.
Pour into tin and bake for 45mins. Test with skewer and if it comes out clean it’s ready!
Eat it all up!!
