Beetroot and apple salad

The combination of earthy baby beetroot and sweet apple make this side salad a winner in our house, and a nice change to the usual garden salad. If you're looking for other salad ideas then check out my Fresh Pasta Salad

Preparation Time: 10 minutes
Cooking Time: Nil
Makes: 4 side salads

Ingredients
2 - 3 baby beetroots
1 Pink Lady Apple (or similar sweet eating apple)
2 tbs Aioli

Method
Don your disposable gloves and peel and grate the baby beetroots into a bowl.



Peel and grate you apple into the same bowl, discard the core.



Using two forks, gently fold the apple into the beetroot. As you can see in the pictures this gives you a beautiful combination of purple and pink.

Add the Aioli, folding it through the beetroot mixture so that it's well coated.



Spoon onto plates and add another swirl of Aioli on top. Enjoy!
