Here's a simple, but nutritious and balanced salad for even fussy eaters.
Preparation Time: 10 minutes
Makes: 3 servings
Ingredients
1 beetroot bulb
25g feta cheese
4 kale leaves
3 tblsp olive oil
2 tblsp balsamic vinegar
Pinch of ground black pepper
Half a lemon
Method
Scrub the beetroot clean and using a sharp knife, carefully slice it into as thin strips as possible (little ones typically aren't keen on thick chunks of beetroot).
Season with the lemon and pepper.
Add the vegetables to a bowl.
Crumble in the feta and serve.
This salad also lasts - I made this on Saturday night and enjoyed it on Monday and Tuesday, with the beetoot still delicious.
