Ingredients 1 brown onion
1 cup mushrooms
700g beef strips
1 beef stock cube
1 cup water
4 tablespoons sour cream
1 tablespoon olive oil
Mashed potatoes and green beans to serve
Dice the mushrooms and cut onions into small pieces.
Warm some olive oil in a frying pan on medium heat. Once it starts to sizzle, put the onions in.
Cook onions until browned, then add diced mushrooms to the pan.
Once mushrooms are browned, turn up the heat and add beef strips. Cook the beef strips quickly on a high heat for just long enough to cook them and no longer to retain their softness. This makes it easier for kids to eat beef, which can sometimes be too chewy for them.
Once beef is cooked, you can turn the heat down to medium again. Mix the stock cube in 1 cup of boiled water, then add this to the pot. Allow to simmer for 5-10 minutes, then turn off heat and add sour cream.
Serve with mashed potatoes and steamed green beans.
