BBQ Chicken Pizza

Pizza - the perfect Friday night treat. But, if you'd rather not pay for an exploited teenager in a franchised pizza place to make it for you, why not give it a go yourself. I guarantee it'll be cheaper, tastier and easier than you think.



Preparation Time: 5 minutes
Cooking Time: 15 - 20 minutes
Makes: 4 servings

Ingredients
1 quantity of Spinach Pizza Dough or a premade pizza base.
400g chicken tenderloin
1 tbs olive oil
1/4 cup BBQ sauce
Tomato paste/pizza sauce
Grated cheddar cheese
Extra BBQ sauce

Method

Mix the BBQ sauce and olive oil in a small bowl. Add the chicken and mix to coat. Put the chicken under a hot grill.



Cook on one side until the chicken has browned and the BBQ sauce caramelised slightly. Turn. Cook the other side until brown and caramelised. Remove from heat. Allow to cool slightly then dice roughly.



In the mean time, punch a few holes into your pizza base with a fork. Spread with the pizza sauce. Add the chicken, cheese and extra BBQ sauce.





Cook in a 220C oven for 15 - 20 minutes. Add extra sauce if you want (why so much BBQ sauce?...you'd have to ask my husband). Serve hot.
