Here's a straightforward birthday cake recipe. I whipped this up for my niece's friend's birthday party. Everyone loved it, even the adults. It's a no-fuss, one-tray bake. Whoever said baking was difficult?

Cooking Time: 30 minutes
Makes: 10 servings
Ingredients
250g of:
Self-raising flour
Butter
Caster sugar
3 eggs
5 Tblsp strawberry jam
50ml double cream
Tsp pure vanilla
50g icing sugar
Tsp mixed spice

Method
Sift the flour over a large mixing bowl.
Add the butter, sugar, spices.
Combine until smooth using a whisk/fork/spoon.
Whisk until completely smooth.
Pour half of the cake mix into a greased cake tin. Repeat with another cake tin and place in the oven at 170 degrees/ gas mark 4 for 30 minutes.
Remove the cakes from the oven and allow to cool for at least 30 minutes.
Remove any domed middle of the bottom cake layer with a knife.
Pour the cream into a bowl along with the icing sugar and vanilla.
Whisk quickly, using a whisk, until smooth, then place in the fridge.
Once completely smooth spread the bottom cake layer with jam.
Pour the cream on top of the jam.
Spread carefully, evenly with a knife.
Add the top layer and dust with icing.
