Banana Spread Breakfast French Toast

This crunchy French toast filled with bananas makes a perfect weekend brunch.



Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 2 servings

Ingredients
4 slices of wholemeal bread
2 bananas, mashed
1 teaspoon lemon juice
Butter

2 eggs
1/4 cup caster sugar
2/3 cup milk
1 teaspoon vanilla extract
Golden syrup, to serve

Method
In a bowl, combine the mashed bananas with the lemon juice. Adding lemon juice here will help prevent the bananas from turning brown. Set this bowl aside.





In another mixing bowl, whisk together the eggs, caster sugar, milk, and vanilla.







Slice each piece of bread in half diagonally.



Spread the banana mixture over half of the pieces of bread, leaving the same number of un-filled pieces of bread to act as sandwich tops.



Top each sandwich with another piece of bread.



Carefully dunk each sandwich into the egg mixture. Dunk one side, sit for a few seconds to soak up some of the egg mixture, then flip it and repeat on the other side.



Heat some butter in a frying pan over medium heat.

Cook one side of the banana sandwiches until golden and cooked through, then flip them over to cook the other side until golden.





Serve with golden syrup.
