Ingredients
150g wholemeal self-raising flour
50g soft brown dark sugar
2 eggs
2 bananas
1 tsp honey
1 tsp demerara sugar
Method
Pre-heat the oven to 160 ༠C/ 140 ༠C fan/325 ༠F/3 Gas.
Beat the eggs with the soft dark brown sugar and honey.
Mash one banana and beat into eggs.
Pour the mixture into cup cake cases.
Slice the remaining banana, and put one slice on top of each cup cake, and then sprinkle with demerara sugar.
