Pancakes are my one true love and kids love them too. Here's a delicious, refined sugar and dairy-free, vegan version of the classic, fluffy beauties.
Admittedly this recipe requires a tiny bit of preparation, but it is completely and utterly worth it.
Preparation Time: 30 minutes
Cooking Time: 5 minutes
Makes: 3 kid servings
Ingredients
100ml almond milk (any nut milk will do)
Half a cup of oats
Tblsp ground linseeds (aka flax seeds)
Cacao drops
Tsp coconut sugar (optional)
Pinch of sea salt
Tsp cinnamon
8 fresh cherries
5 strawberries
1 banana
Tsp Baking powder
Tsp coconut oil
Method
Add water to the ground flax seeds and allow to sit for 15 minutes.
Slice the cherries and bananas and set aside.
In a small cup microwave the cacao with a little bit of the milk and the coconut sugar until melted and set aside.
In a large blender combine the wet ingredients and the dry ingredients, save for the cherries and chocolate sauce.
Once mixed pour the batter on to a searing hot frying pan coated with coconut oil.
Allow each side to cook for two minutes.
Repeat with the rest of the batter until you have a sizeable stack.
Once you have your 'stack' of pancakes, pour over the chocolate sauce and serve with the cherries.
These are delicious, easy to make pancakes that make kids and grown ups very happy.
