Balsamic chicken and vegetables

Vinegar, chicken and vegetables aren't the most popular ingredients when thinking of a recipe kids will love, but you'd be surprised at how much of a hit this is with little ones. All it takes is a few simple ingredients and you'll have a meal worth waiting for.



I served up this exact recipe for my niece and nephew, and they loved it.

Preparation Time: 2 minutes
Cooking Time: 45 minutes
Makes: 2 servings

Ingredients
Tsp mixed herbs
Half tsp black pepper
3 tblsp olive oil
Handful of spinach
Handful of fresh or frozen broccoli
2 chicken legs
3 tblsp balsamic vinegar

Method
Place the chicken legs in a baking tray and drizzle with the oil and season.



Pour over the vinegar and place in the oven for 30 minutes at 170 degrees/gas mark 4.



After 30 minutes remove the chicken and turn over so the other side is coated in the balsamic reduction.



Add the broccoli and place back in the oven for a further 15 minutes.



Remove from the oven.



Serve with a handful of the spinach and pour over the remaining juices from the bottom of the tray.
