Balsamic chicken and cheesy mash

This recipe is an absolute winner. My mother used to make this fr my sisters and I when we were in High School, and it was a real treat; it tastes luxurious, and it seems like you're eating in a fancy restaurant, when in fact you're sitting round the table, enjoying good food with your family. This dish brings everyone together because everyone usually exclaims about how good it is. Bookmark this one, it will soon become a favourite.



The combination of cheesy potatoes and sticky balsamic chicken is one you won't forget, or your kids. Surprise them with this dish when they've been good, and they'll start looking forward to dinner time, as will you.

Preparation Time: 5 minutes
Cooking Time: 45 minutes
Makes: 2 adult, 4 child servings

Ingredients
2 onions
2 large chicken fillets
3 potatoes
2 garlic cloves
5 tbslp balsamic vinegar
2 tsp fruit sugar/sweet freedom
Sprig of thyme
Sprig of rosemary
Half tsp black pepper
2 Tbslp butter
20g cheese

Required ingredients


Method
Finely chop the onions and garlic.



Place the chicken fillets in a sieve atop a saucepan of boiling water, season with all of the herbs, pepper, and the chopped garlic cloves and cover with a lid. Simmer for 15 minutes.



Peel and wash the potatoes.



Place the potatoes in the saucepan over which the chicken is steaming, for 10 minutes.



Transfer the chopped onions to a large frying pan with a glug of oil. Cook over a simmering heat for 10 minutes.



Remove the onions from the pan once caramelised and add to the potatoes along with half of the butter, and cheese.



Place the chicken in the same pan which the onions were cooking. Simmer until golden (5 minutes)



Add the vinegar, remaining butter and the fruit sugar to the saucepan. Cook for 5 minutes over a medium heat.



Mash the potatoes, butter, onions and cheese together to form mashed potato.



Remove the chicken from the pan once caramelised all over.



Plate up, mash first.



Add the chicken and pour over the sauce.



Tuck in.
