Why not try making this for New Years dinner and save on time so that you can join in on the celebrations. When prepared in this way, the salmon turns out moist and succulent. If you are worried about costs, I worked out that it is much cheaper to buy the whole fillet and skin it yourself rather than buy the small salmon fillet portions. It is also an absolute cooking pleasure to have the whole fillet and to prepare it yourself; you will amaze everyone with your supreme cooking skills.
If you like your salmon a little bit raw in the middle, then I recommend cooking for much less than 20 minutes and checking regularly. Sometimes if you take it out of the oven early and let it sit in the foil in its own juices, it will cook by itself.
If you are worried about the children not liking this meal, rest assured it does not taste 'fishy' but rather zesty and lemony because of the herbs and flavours. By all means experiment with different flavour that your family prefers, but the salmon always speaks for itself.

Ingredients
1 whole salmon fillet
1 lemon
2 tablespoons of soy sauce
Fresh herbs: you can use dill, parsley, thyme
Extra virgin olive oil
Pepper
Method
Skin the salmon fillet (or you can buy one already skinned).
Place the fillet in foil on a baking tray with some lemons on top.
Pour some olive oil, soy sauce and the juice of one lemon over it.
Add the garlic and herbs and cover both sides of the salmon in the flavours.
Cover the salmon with foil by folding it all around and making a neat parcel.
Bake for 20 to 25 minutes on 200 degrees, checking once. If you prefer it a little bit raw in the middle, then bake for less.
When baked to your satisfaction, serve up on a bed of rice or with some salad and fries.
