Baked Pattypan Squash Slice
Cherish all we have, simplify all in our life, enjoy every moment.
It is so delicious and nutritious, but yet easy to make.

: 6-8 servings
350-400g pattypan squash
100g carrot, peeled
3-4 small button mushrooms
1 sliced short cut rindless bacon
1 1/2 cup shredded cheddar cheese
1 cup gluten free self-raising flour, sifted
5 eggs, beaten
Preheat oven to 180°C
Chop or grate pattypan squash, carrot, mushroom and bacon into thin small strips.
In a large mixing bowl, add sifted flour, grated squash, grated carrot, chopped mushrooms, bacon strips and shredded cheese. Mix thoroughly.
Add beaten eggs, stir through to mix well.
Line baking paper on a baking tray. Pour the mixture into the tray.
Bake in oven for 40-45 minutes until golden.
Allow to cool slightly and slice into squares.
serve warm, cool or packed into lunch box
