Getting little ones to eat beetroot couldn't be easier with this fool-proof, yet nutritious recipe. This is my take on The Happy Pear's beetroot burgers.
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 3 servings
Ingredients
100g raw beetroot
50g feta cheese
25g parmesan cheese
Tblsp ground black pepper
2 spring onions
2 garlic cloves
5 potatoes and sweet potatoes
50g breadcrumbs
1 egg
Sprig of fresh thyme
Method
Scrub the potatoes and score on the back. Place in the oven for 1 hour.
Finely chop the beetroot.
Add the beetroot, herbs and onions to a frying pan with the pepper and oil. Fry for 5 minutes.
Transfer the fried beetroot and onion mix to a bowl along with the breadcrumbs, cheese and egg. Combine and form in to balls.
Add the balls to a tray lined with baking paper and bake for 20 minutes.
Remove the potatoes from the oven.
Serve with a garnish of your choice. Pictured: alfalfa sprouts.
