Asian-Inspired Salad

Asian flavours work a treat in salads, injecting much-needed sweetness, saltiness, and typically a zingy punch from ginger and traditional East Asian herbs and roots. Here's an easy way of injecting both colour and flavour into your diet with this superb salad.



Preparation Time: 2 minutes
Cooking Time: 10 minutes
Makes: 5 servings

Ingredients
Half a red cabbage,
2 radishes,
3 carrots
1 broccoli head,
100g mange tout
3 tblsp salted peanut butter
Thumb sized chunk of ginger
3 dried red chillies
10ml coconut oil/3 tblsp



Method
Wash and chop all of the vegetables to size - halve the carrots, finely slice the radishes and roughly chop the cabbage.



Add it all to a bowl of ice cold water to freshen up the veggies so they retain firmness for much-needed crunch during cooking.



Pound the ginger and chillies to a pulp in a pestle and mortar / bash with the back of a knife.

Add all of the vegetables, save for the radishes and broccoli, and ginger-chilli mix to a frying pan and cook in the coconut oil.



Allow the vegetables to sweat for two minutes then add the broccoli and 100ml of water, and place a lid on top so it steams, rather than fries the dish. Allow to steam for 8 minutes.



Once cooked transfer the vegetables to a large bowl. Garnish with the radishes and add the dollops of peanut butter on the side.
