Arabic flavours make chicken sing. The classic combination of coriander, lemon, chilli and a few herbs make for a wonderfully flavoured roast, which will feed a large family with ease.

Makes: Serves a whole family/ 6 people
Ingredients
1 large chicken
1 onion
cube of ginger
2 stick of celery
5 garlic cloves
5 dried birds eye chilles
Handful coriander leaves
Handful fresh thyme
5 Tblsp olive oil
Tsp cinnamon

Method
Chop the vegetables and crush the garlic with the back of a knife.
Place the vegetables and seasoning in a large baking tray with a glug of oil.
Add the chicken and rub with the seasoning and vegetables all over. Place it in the fridge and cover with foil. Leave to marinate for at least 8 hours or overnight.
Take the chicken out the fridge and roast in the oven for 2 hours and 15 minutes, turning each hour for even colour.
Carve the chicken and serve with rice, potatoes, salad or vegetables.
This chicken makes a great filler for sandwiches, wraps or lunchboxes.
