Apricot Tarts

Heart pastry, puff pastry

This is a good way to let your children use up left-over pastry. They can pick the shape they want to make from your selection of cookie cutters. By using fruit spread rather than jam, you can also cut down on the refined sugar content. Fruit spread also tends to have larger chunks of fruit in it, which means that the jam won't run off these tiny tarts. Apricot works especially well, but any fruit spread with chunks would be good.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 10-12 servings

Ingredients
Leftover ready-roll puff pastry (about 50-75g)
3 tbsp apricot spread or jam

Method
Preheat the oven to 180 Celsius.
Roll out the puff pastry and cut out with a heart-shaped cookie cutter.

Using a teaspoon pop a little bit of apricot spread in centre of each heart.

Bake in the oven for about 15 minutes until the pastry is golden.
