If you have a problem getting your child to eat apple, this is an ideal solution, as the apple is grated into the pikelet and you cannot taste it when cooked!
Added to this, there is also pear in this recipe and little added sugar.
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: About 20 pikelets
Ingredients
2 small pears
1 sweet apple, peeled and grated
1 egg
1 cup buttermilk
1 tbsp butter, melted, cooled
Extra butter for cooking
1½ tsp vanilla
1 cup self raising flour
½ tsp bicarbonate of soda
¼ cup caster sugar
Icing sugar (optional)
Cream (optional)
Method
Beat the egg, vanilla and buttermilk.
Stir in the grated apple.
In another bowl, combine the flour, bicarb soda, sugar and ¼ tsp of salt.
Make a well in the centre and add the buttermilk mixture.
Mix till it forms a batter, and let stand for 5 minutes, stirring occasionally.
Melt a few tsps of butter in a large non stick frypan, and cook 3 pieces of the pear for a minute or so on each side.
Add a large tbsp of the batter on the top of each pear slice, using the back of a spoon to shape into round pikelets, and covering the pears.
Cook the pikelets for about 3 minutes on one side or until little bubbles appear all over, and they are a golden colour underneath.
Turn carefully and cook a further 2 minutes.
Put these on a plate and continue till you have cooked all the pikelets and pears, adding more butter in between, if needed.
Sprinkle the finished pikelets with icing sugar and serve warm or at room temperature.
Add thickened cream, if desired -very yummy!
You could also spread them with butter for school lunches.
These keep well in the fridge and can be reheated slightly in the microwave.
