Here's an easy way to get kids to eat celery: put it in soup! This is slightly sweet, creamy, and a real warmer on days when you just want to feed your kids healthy, heart-warming food.

Makes: 2 servings
Ingredients
1 apple (any variety)
1 onion
3 sticks of celery
2 garlic cloves
100ml vegetable/chicken stock
3 tblsp cream cheese
3 sprigs fresh thyme
Tsp black pepper
3 dried bird chillies
Tblsp ground cinnamon
Method
Add the seasoning and oil to a pan and warm over a medium heat for 5 minutes.
Chop all of the vegetables to equal size.
Add the vegetables to the pan and cook for 10 minutes over a medium heat.
Roughly chop the apple and add to the pan. Cook for a further 5 minutes.
Once the vegetables begin to caramelise add the stock and simmer for 5 minutes.
Pour the soup-y broth into a blender and add the cream cheese.
Pour into bowls and serve immediately with a side of crusty bread.
