Apple and Berry Muesli

A scrumptious breakfast packed full of delicious fruits and muesli to give heaps of energy and goodness to start the day energised and ready to go! Muesli is typically low in sugar compared to a lot of other supermarket bought breakfast cereals. It's also high in whole grains and fibre to help regulate the digestive system, and it also a potent source of antioxidants! Adding yoghurt gives the muesli a brilliant dairy and protein addition. Berries also add antioxidants, fiber, vitamins and minerals to breakfast!



Preparation Time: 5 minutes
(The base breakfast muesli takes about 30 minutes to prepare, and can be made beforehand in just about any quanitity and stored in an airtight container).
Makes: 4 servings

Ingredients
2 cups of breakfast muesli
1-2 cups of berry yoghurt
2 apples
4 handfuls of fresh or thawed frozen mixed berries

Method
If using frozen berries, place the berries in a single layer on a plate and pour a sprinkling of orange or apple juice over them. Roll the berries around in the juice and leave to thaw. A 10-20 second turn in the microwave can also help if the berries aren't thawing fast enough, but do this in blasts of 10 seconds to keep an eye on how the berries are thawing.

Place 1/2 cup of breakfast muesli in each of four breakfast bowls.



Grate the apples to a coarse grate - use the largest grating option on a grater with multiple choices.

Divide the coarsely grated apple evenly between the four breakfast bowls and toss each through to mix the muesli and apple. Alternately, and for a chunkier apple experience, thinly slice and chop the apples then mix the pieces into the muesli.





Add a dollop of berry yoghurt (or natural greek yoghurt or your favourite type) on top of the apple and muesli mix in each bowl.



Sprinkle with a handful of fresh or thawed mixer berries.

Devour.



If the muesli is still too dry to taste, add a sprinkling of additional orange or apple juice and mix through.

You can also add some sunflower seeds, pumpkin seeds and almond slivers to input some extra goodness into breakfast! Complement with a glass of juice or milk.
