I love a good salad, and here's one your kids will love too. There's a variety of textures and flavours in this dish, which make it more interesting for little ones. Radishes provide peppery heat, the peach provides a sweetness and the avocado offers a cool and creamy respite from the flavours, creating a harmony needed for a perfectly balanced salad.

Makes: 4 servings
Ingredients 1 red pepper
1 baby courgette
Half a cos lettuce head
Handful of spinach
Half tsp ground black pepper
Tablespoon olive oil
3 basil leaves
wash and chop the lettuce. Place the leaves in a large bowl.
Slice the pepper, radish and courgette.
Add the sliced vegetables to the bowl.
Season with the basil, pepper and oil.
Slice over the carrots and tomatoes and toss.
Finally top with the apricot and avocado, equally sliced.
